This authentic seafood recipe from the Croatian coast will blow you away with the depth of flavor and ease of cooking. It's a must-try dish to truly understand the cooking in Dalmatia.
In a heavy saucepan sauté the onion in olive oil. After about 15 minutes, add the garlic, breadcrumbs and half of the chopped parsley leaves. Season with salt and pepper.
Add the cherry tomatoes for a deeper flavour. After they wilt, mix in the tomato juice and sugar.
Throw in the langoustines. Pour water over them so they are almost submerged. Cover with a lid and simmer for 15-20 minutes. The langoustines are done when their meaty tail becomes opaque.
Add wine and simmer for another 5 minutes. Garnish with the rest of the chopped parsley leaves.
Serve with crusty white bread and a bowl of water on the side for washing your fingers.
