Soak the beans in about 2.5 l (10 ½ cups) of water overnight or for 4-5 hours.
The following day, rinse the beans, cover with fresh water and bring to a boil. Strain immediately.
Add fresh water, smoked meat, sprigs and all the vegetables apart from 1 carrot and 1/2 onion. Season with salt, pepper, paprika and bay leaves and cook on low heat for 90 minutes.
Remove the cooked vegetables and meat, leaving only beans and stock. Discard the vegetables. Chop the meat into 3-cm- (1-in-) chunks to be served on the side.
Ladle out 1 cup of beans with some stock, add tomato paste and blend into a smooth paste. Pour back into the pot.
While the beans are cooking, make the pešt. Finely dice all 3 ingredients separately, then blend everything into a smooth paste. Set aside.
Next, chop the rest of the onion and sauté it on olive oil until golden. Then add the remaining carrot, also chopped, and let it all sweat for 10 minutes. Lastly, stir in the pešt.
Pour the sautéed vegetables into the main pot and let everything come to a gentle simmer.
Cook the pasta al dente. Drain, rinse and add it to the pot.
